Our company is looking for a Head Butcher to join our team.

Responsibilities:

  • Report any food spoilage/wastage to the Head Chef;
  • Ensure effective food storage and stock rotation;
  • Keep all working areas clean and tidy and ensure no cross contamination;
  • Comply with hotel security and fire regulations;
  • Assist other departments and maintain good working relationships;
  • Assist in positive outcomes from guest queries in a timely and efficient manner;
  • Prepare all meats and fish to the highest quality and within company guidelines;
  • Be environmentally aware;
  • Responsible for controlling costs without compromising standards, improving gross profit margins and other departmental and financial targets;
  • Establish and monitor portion sizes for cuts of meat and fish;
  • Report maintenance, hygiene and hazard issues;
  • Responsible for complying with and training Health and Safety and Food Safety standards and legislation.

Requirements:

  • Positive attitude;
  • Relevant qualification;
  • Ability to work on your own or in teams;
  • Achieved Intermediate Food Hygiene Certificate;
  • Previous kitchen or butchery experience;
  • Ability to work under pressure;
  • Good communication skills.
